It’s all about the honey, Honey!

Occasionally, I will meet someone who doesn’t like honey.

(insert frowny face here : [ ) The majority of people love it! And it’s easy to see why! Honey is a completely natural sweet treat! Bees work so hard…

“To make one pound of honey, the bees in the colony must visit 2 million flowers, fly over 55,000 miles and will be the lifetime work of approximately 768 bees.”

That’s a lot of work for 1 pound of honey!

Honey never goes bad and is one of the few foods to have an eternal shelf life.

– It NEVER ‘goes bad’ or spoils, although eventually (all real honey) will crystalize. Some of the oldest honey found in tombs of the Egyptians dating back several thousand years. Honey contains low moisture levels and is naturally acidic, making it difficult for spoiling bacteria to grow. There is also a special enzyme found in the stomach of a bee, which breaks down into chemicals inhibiting the growth of bacteria and other organisms.

Honey has tons of nutritional properties as well:

-Evidence of honey being prescribed as a medical treatment dates back as far as ancient Mesopotamia. Because the substance is so inhospitable to bacteria, it was often used as a natural bandage to protect cuts and burns from infection. Today, honey is still used as a natural treatment for dandruff, stomach ulcers, and even seasonal allergies.

-Due to its anti-bacterial properties, honey has been used for a variety of ills including cuts, burns, infections, stomach ulcers, and more.

-It contains water, vitamins, minerals, and necessary enzymes to give the body energy. (iron, zinc, potassium)

-Pinocembrin, an antioxidant is also found in honey and is effective at improving the functioning of the human brain.

-Honey also has antioxidant levels similar to that of apples, spinach, strawberries, and oranges.

-There are several parasites which can invade the human body and cause illness. A mixture of equal parts honey, vinegar, and water is all you need to kill off the parasites. Drink this concoction for several days if you suspect you have parasites or even as a general body cleanse.

– Honey is full of antioxidants, including catalase, ascorbic acid, flavonoids and alkaloids.

-Honey that is sold as raw contains all the pollen, enzymes and other micronutrients that are usually filtered out or destroyed by heat when the honey is processed. Traditionally, honey is heated and filtered so that it will remain liquid much longer. Raw honey will crystalize quickly due to the fact that it is unfiltered. That Elderberry Lady offers several raw honey’s, which are never heated above 115 degrees. Many people believe that raw honey contains additional health benefits over traditionally processed honey.

-Honey contains antioxidants, which can protect the body from inflammation. Inflammation can lead to a variety of health issues, including heart disease, cancer, and autoimmune disorders. One study discovered that antioxidants in buckwheat honey were detectable in blood plasma, showing that eating honey could enhance antioxidant activity in the body.

-In one study, two teaspoons of honey relieved children’s nighttime cough and allowed them to sleep. However, doctors do not recommend this practice for children less than a year old.

Cooking with Honey…

Replace 1 cup of sugar with 3/4 cup of honey and reduce the liquid in the recipe by ¼ cup. Add a pinch of baking soda to recipes that do not call for sour cream or sour milk, so as to reduce the acidity of the honey. Cook jellies and jams at higher temperatures when you replace sugar with honey.

  • When baking with honey, lower the oven temperature by 25° to 30° F to prevent over-browning.
  • When measuring honey, first coat the measuring utensil with a small amount of oil so the honey will not stick.
  • Store honey at room temperature rather than in a refrigerator. Keep it tightly covered and in a dry place.
  • If honey granulates, place its container in hot water until the honey re-liquefies.
  • Honey, because it is hydroscopic, tends to keep foods moist and tender. Therefore, if you are baking goodies for kids away at school, service members overseas, or friends out of town, always bake with honey to ensure freshness.

What if my honey crystalizes?

Crystallization or Granulation is a natural occurring process of honey that changes it from liquid to solid. Some people think the honey is spoiled as it crystallizes but according to the chart, crystallization in honey occurs when the honey molecules are at optimum temperature. It then begins to crystallize. This has a lot to do with how you store you honey. If you store your honey above 60 degrees Fahrenheit (or in a certain containers the optimum is 57 to 58 degrees) it will crystallize. Levulose and dextrose levels affect crystallization also, so typically the one with the higher dextrose will crystallize more quickly; for example, Clover and Alfalfa crystallize more quickly than Orange Blossom or Blackberry. Also larger quantities will crystallize if they are stored on a concrete floor and the cold temperatures are drawn up into the container. If the honey re-crystallizes very quickly it only means that the honey did not get properly liquefied which means that the sugar crystals did not get dissolved. So if you place your honey in a pan of water and heat it slowly making sure you dissolve all the crystals you can slow crystallization or it will re-crystallize within just a few days.

There are 20,000 species of bees on earth and only a small fraction of them make honey. The species of honey bee used for commercial beekeeping in the U.S. is known as Apis mellifera. It’s one of only seven known honey bee species.

-As for as tea goes, I am partial to the Ginger Honey

-And lastly, when cooking…. I add the Vanilla Bean Honey to cakes and cookies, I add the Rosemary Honey to veggies or Chicken, and the Ghost Pepper Honey is great on Chicken (and chicken biscuits) or use on ribs (my husbands favorite!)
